I'm sure that you've seen Christmas Tree Brownies, but these I'm yet to see, so I decided to make them a thing!
A delicious Christmas tree cookie bar, coated in creamy chocolate and topped with sprinkles. What else could you ask for? The candy cane trunks are also so cute!

Makes 6 Christmas Tree Cookie Bars, but depends on your cutter size (+ loads of cookie leftovers:)
These will last a few days, at room temperature, in an airtight container.
Ingredients
135g unsalted butter, softened
150g caster sugar
1 medium egg
1 tsp vanilla extract (good quality)
250g plain flour
1 tsp baking powder
50g milk chocolate chunks
175g dark or milk chocolate
30g white chocolate
sprinkles
Instructions
1. Preheat the oven to 180C/160C fan oven and line a baking tray (I use a 10x7 inch) with baking paper.
2. Beat together the butter and sugar until pale and fluffy, before adding the egg and vanilla extract.
3. Mix in the flour and baking powder. Then fold in the chocolate chunks.Bake for 20-25 minutes, until slightly golden.
4. Leave to cool for 10 minutes in its tin, before removing to cool fully on a cooling wrack. Meanwhile, melt the chocolate in the microwave in 30 second bursts or alternatively over a bain-marie.
5. Using a Christmas tree cutter, cut out the cookie bar into Christmas trees. Cover with chocolate and place in the freezer for a few minutes, or until set. In the meantime, then gently melt the white chocolate.
6. Drizzle the white chocolate across the Christmas trees and then top with sprinkles. Refrigerate or freeze until set and enjoy!
