A quick and easy autumnal pudding = a perfect comforting bake!
This is the most delicious crumble, thanks to the rich toffee sauce and the use of brown sugar. Crumble making is a very therapeutic process and not difficult bake at all. I make my own toffee sauce in advance, but alternatively you could buy it from a jar.
INGREDIENTS
100ml double cream
100g light brown sugar
50g unsalted butter
1/4tsp vanilla extract
130g plain flour
70g light brown sugar
75g unsalted butter, refrigerated
A small pinch of salt
1/2tsp ground cinnamon
4 medium eating apples
4 tbsp toffee sauce + the rest to serve
Serves 4-6 people
This will last a few days, in the fridge, covered.
METHOD
1. If making the toffee sauce from scratch, follow the BBC Good Food's recipe HERE. As shown in my ingredients list, I half the toffee recipe that they provide. However, like I said, you can always buy it from the supermarket!
2. Onto the crumble. Firstly, preheat the oven to 200C/180C fan.
Place the flour, sugar and butter in a bowl, gently rubbing with your fingertips, until they reach a fine breadcrumb consistency. Leave to one side.
3. Wash, peel and core the apples. Pat dry, before cutting into 2cm chunks.
4. Place the apples in your baking dish, along with 4tbsp toffee sauce, mixing through evenly. Top with your crumble mixture and press it down slightly.
5. Bake in the oven for 30 minutes, before leaving to cool for at least 15 minutes before serving.
